I think, left to my own devices, if I never had to feed kids or hungry men, I would not eat big meals…I would just be a snacker. According to some folks, five or six small meals a day are better than two or three large meals, so maybe that wouldn’t be all bad. Whatever. In any event, snack recipes just keep whacking me over the head lately and I just love this one. I’m a fan of beans for their protein and fiber, so this is a great, healthy alternative to salty chips and crackers that have no nutritional value. Whips up in 30 minutes, start to finish, and offers some protein and fiber at around 100 calories per serving. This is from a September/October 2009 issue of Eating Well magazine. Enjoy!
